Práce se zabývá základními surovinami pro výrobu piva. Krátce také popisuje samotnou výrobu. Dále charakterizuje jednotlivé polyfenolické látky v pivu, jejich charakteristiku a dělení. Mimo jiné se zmiňuje o vlivu polyfenolických látek na zdraví člověka. Nakonec uvádí možnosti jak tyto látky v pivu stanovit. |
