První část této práce je rešeršního charakteru a pojednává o způsobu, jakým dochází ke vstupu těžkých kovů do životního prostředí a potravního řetězce. Dále vysvětluje chování a přeměnu těchto kontaminantů, poté co se dostanou do potravního řetězce. Objasňuje jakým způsobem jsou těžké kovy schopny ovlivnit přirozené biologické děje v organismech. Na-konec se tato část práce věnuje metodám, kterými se obvykle tyto prvky stanovují a to po stránce jak principielní, tak i technické. V druhé části této práce, která je experimentálního charakteru, bylo změřeno, jak vysoké koncentrace těžkých kovů se vyskytují v sortimentu ryb prodávaných v potravních řetězcích. Naměřené hodnoty byly srovnávány s vyhláškou 305/2004 Ministerstva zdravotnictví. |

The first part of this bachelor thesis, which is understood as short summary, deal with the way how to enter the heavy metals into environment and food pyramid. Moreover, the be-haviour and conversion of these contaminants after foot pyramid entering is described. Fur-ther, this thesis explain how to the heavy metals can influence the natural biological process in organism. Finally, the common methods for the heavy metals determination both principal and technical aspect are decribed. In the second part of this bachelor thesis, which is ex-perimental part, the concentration of heavy metals in assortment of fish selling in food store is measured. The determined values are compared with official announcement of Ministry of Health 305/2004. |
