ABSTRAKT Diplomová práca sa venuje zmenám antioxidačnej aktivity a zmenám obsahu polyfenolov u duly podlhovastej v procese skladovaní. Teoretická časť obsahuje stručnú charakteristiku duly, jej využitie v potravinárskom a medicínskom priemysle, podmienky pestovania a tiež zdravotné aspekty, ktoré duly prináša. Tiež je zobrazený aj prehľad metód, ktoré sa využívali pri stanovení odrôd duly. V experimentálnej časti sú vyhodnotené výsledky laboratórnych analýz. Experimentálna časť je zameraná hlavne na vplyv obsahu polyfenolov a na antioxidačnú aktivitu v jednotlivých odrodách duly v rokoch 2019 a v rokoch 2022. Na základe merania sa zistilo, že obsah polyfenolov koreluje s antioxidačnou aktivitou. |

The diploma thesis is devoted to changes in antioxidant activity and changes in the content of polyphenols in quince oblongata during the storage process. The theoretical part contains a brief description of doula, its use in the food and medical industry, growing conditions and also the health aspects that doula brings. An overview of the methods used to determine the varieties of doula is also shown. In the experimental part, the results of laboratory analyzes are evaluated. The experimental part is mainly focused on the influence of the content of polyphenols and on the antioxidant activity in individual varieties of quince in 2019 and 2022. Based on the measurement, it was found that the content of polyphenols is correlated with the antioxidant activity. |
