Tato práce je zaměřená na popis a stanovení polyfenolů ve vzorcích piva. Vzorky byly odebrány v různých fázích procesu výroby piva. Polyfenoly jsou stanovovány spektrometricky na přístroji Spekol 11 a vysokoúčinnou kapalinovou chromatograficky s UV detektorem. Metoda spektrometrická je hromadná a určuje polyfenoly celkově, metoda chromatografická je metoda selektivní a určuje konkrétní látky. Naměřené hodnoty se pohybují v rozmezí pro obsah polyfenolů v pivu. |

The subject of this essay concerns the descriptions and analyses of polyphenols in beer. The samples were taken at different times during the brewing process . The polyphenols were analysed on the spectral colorimeter "Spekol 11'q and with high pressure liquid chromatography (HPLC) with ultraviolet (UV) detector. The spectrometric mass method analyses the polyphenols as an entirety. The chromatographic selective method is used to define the specified polyphenols. The numbers realized have to be within the maximum and minimum allowance for the amount of the polyphenols in beer. |
