Tato rešeršní bakalářská práce se zabývá obalovými materiály používanými v potravinářství od historie až po nové trendy v tomto oboru. Zahrnuje ochranu potravin obalem před vnějším prostředím, možnosti kontaminace potravin obalem, kde jsou popsány jednotlivé materiály používané v potravinářství pro konkrétní aplikace a jejich výhody a nevýhody. Další část práce se zabývá novými trendy v obalovém průmyslu (jako např. aktivní a inteligentní obaly), zmiňuje i již nově používané technologie při balení potravin. Nedílnou součástí této práce jsou i legislativní požadavky na obalové materiály v potravinářství v EU. |

This Bc. thesis deals with packaging materials used in food industry both from the historical perspective as well as of the new trends occurring in this emerging scientific field. Food packaging includes protection of the foodstuff from the outside environment and the possibility of contamination of food by packaging materials. There are described various materials used in food packaging for particular applications and there are simultaneously highlighted their advantages and disadvantages. Another part of the text deals with the new trends in the packaging industry (such as active and intelligent packaging), as well as already above mentioned new technologies used in food packaging manufacturing. An integral part of this work is focused on legislative requirements applied on food packaging materials in the EU. |
