Tato bakalářská práce je zaměřena na problematiku falšování potravin v historii a v dnešní době. Jsou zde uvedeny klasické metody průkazu falšování potravin např. mikroskopické metody nebo Kjeldahlova metoda. Z moderních metod průkazu těchto falšovaných potra-vin jsou zde uvedeny např. ELISA, polymerázová řetězová reakce či kapalinová chroma-tografie (HPLC). Práce se zabývá také legislativou a státními orgány odpovědnými za kontrolu potravin. |

This thesis is focused on food adulteration in history and today. There are listed classical methods for authentification of food such as microscopic method or Kjeldahl method. The modern methods of compliance of adulterated food are given there as ELISA, polymerase chain reaction and liquid chromatography (HPLC). Thesis deals also with legislation and state authorities responsible for food control. |
