Diplomová práce se zabývá obsahem antioxidační kapacity, celkovým obsahem polyfenolů a minerálních látek ve vybraných druzích naklíčených semen zrnin. Teoretická část pojednává o procesu klíčení semen, jejich postupech a stručně charakterizuje zvolené druhy obilovin a zeleniny. Zaměřuje se na jejich obsahové látky před a během klíčení, zejména na antioxidanty a jejich příznivé účinky na lidský organismus. V praktické části jsou popsány a vyhodnoceny stanovené výsledky laboratorních analýz u vybraných vzorků. |

This thesis deals with the content of antioxidant capacity, total content of polyphenols and minerals in selected species of grain sprouted seeds. The theoretical part discusses the process of seed germination, their practices and briefly describes selected types of cereals and vegetables. It focuses on the content of the substance before and during germination,especially in antioxidants and their beneficial effects on the human organism. In the practical part of the evaluation is described and results of laboratory analyzes of selected samples. |
