Cieľom diplomovej práce bolo stanoviť chemické charakteristiky valašských odrôd jabĺk a dulí. Stanovený bol obsah vlákniny, vitamínu C a stráviteľnosť. Teoretická časť práce je zameraná na popis ovocia, daných charakteristík a metódy HPLC. Obsah vlákniny bol stanovený pomocou prístroja Ankom220 Fiber Analyzer. K stanoveniu vitamínu C bola použitá metóda HPLC-ECD. Stráviteľnosť bola stanovená gravimetricky, po hydrolýze pankreatinom s použitím inkubátora Daisy. |

The aim of this thesis was to measure chemical characteristics of wallachia varieties of apples and quinces. Content of fiber, vitamin C and digestibility was measured. The theo-retical part is aimed to describe the fruit, its characteristics and the HPLC method. The fiber content was determined using the device Ankom220 Fiber Analyzer. The HPLC-ECD method has been used for measuring vitamin C. Digestibility was determined gravi-metrically, after hydrolysis with pancreatin using Daisy incubator. |
