dc.description.abstract	Tato bakalářská práce se zabývá identifikací a charakterizací grampozitivních bakteriálních kmenů, které byly izolovány z potravin nepříznivých pro jejich růst, a to z tavených sýrů a masových konzerv. Mezi cílené charakterizované vlastnosti patřila schopnost tvorby biofilmu modifikovanou Christensenovou metodou, sledování růstu kmenů při rozdílných kultivačních teplotách a testování antibiotické rezistence na vybraná antibiotika diskovou difuzní metodou. V experimentální části bylo zjištěno, že z vybraných potravin byly izolovány bakteriální rody Bacillus, Cytobacillus, Lysinibacillus, Paenibacillus a Peribacillus. Izolované kmeny těchto rodů vykazovaly velmi dobrý růst v rozmezí teplot 25 - 45 °C. Tvorba biofilmu byla prokázaná u většiny zástupců rodu Bacillus, Cytobacillus a Lysinibacillus a u rodu Paenibacillus a Peribacillus taktéž. V rámci testování antibiotické citlivosti bylo zjištěno, že všechny kmeny jsou rezistentní vůči penicilinu. Některé kmeny byli vyhodnoceny jako multirezistentní. Tato práce prokázala, že v potravinách nepříznivých pro růst mikroorganizmů se určité mikroorganizmy vyskytovat mohou.

dc.description.abstract-translated	This bachelor thesis deals with the identification and characterization of Gram-positive bacterial strains isolated from foods unfavourable for their growth, namely processed cheese and canned meat. The targeted characterization included the ability to form biofilms by the modified Christensen method, monitoring the growth of the strains at different cultivation temperatures, and testing antibiotic resistance to selected antibiotics by the disk diffusion method. In the experimental part, the bacterial genera Bacillus, Cytobacillus, Lysinibacillus, Paenibacillus and Peribacillus were isolated from the selected foods. The isolated strains of these genera showed very good growth in the temperature range of 25 - 45 °C. Biofilm formation was demonstrated for most representatives of the genera Bacillus, Cytobacillus and Lysinibacillus, and the genera Paenibacillus and Peribacillus as well. In antibiotic susceptibility testing, all strains were found to be resistant to penicillin. Some strains were evaluated as multiresistant. This work has shown that certain microorganisms can be present in food unfavourable for the growth of microorganisms.
