Teoretická část charakterizuje med, legislativní požadavky na med, popisuje tvorbu medu včelami a způsob získávání medu. Jsou zde také popsány metody využívané pro posouzení vlastností medu. Byly provedeny analýzy vybraných vzorků medů - obsah vody v medu refraktometricky, stanovení měrné elektrické vodivosti neboli konduktivita, titrační a aktivní kyselost, stanovení obsahu fruktózy a glukózy polarimetricky a kapalinovou chromatografií a stanovení úhlu otočení roviny polarizovaného světla. |

The theoretical part characterizes honey, legislative requirements for honey, describes the production of honey by bees and the method of obtaining honey. The methods used to assess the properties of honey are also described here. Analyzes of selected honey samples were carried out - water content in honey by refractometry, determination of specific electrical conductivity or conductivity, titration and active acidity, determination of fructose and glucose content by polarimetry and liquid chromatography and determination of the angle of rotation of the plane of polarized light. |
