Bakalářská práce pojednává o chitosanu a jeho derivátech jako významných biopolymerech pro řadu praktických aplikací. V první části práce jsou popsány a klasifikovány běžné polysacharidy, dále je charakterizován chitosan, jeho struktura a vlastnosti. Druhá část obsahuje přehled vybraných chitosanových derivátů a zabývá se praktickým využitím těchto látek, zejména ve zdravotnictví, farmacii a potravinářský průmysl. |
