Cieľom tejto práce bolo vyizolovať a stanoviť obsah vitamínu C v brokolici pri rôznych tepelných úpravách. Vitamín C bol stanovovaný v brokolici čerstvej, v brokolici varenej vo vode po dobu 10 a 15 minút a v brokolici parenej po dobu 10 a 15 minút. K stanoveniu vitamínu C bola použitá metóda HPLC-ECD. |

The aim of this work was to isolate and measure the content of vitamin C in brocoli at various thermal conditions. Vitamin C was maesured in fresh brocoli, brocoli boiled in water for 10 and 15 minutes and brocoli steamed for 10 and 15 minutes. The HPLC-ECD method has been used for measuring vitamin C. |
