Bakalářská práce se zabývá aminy se zaměřením na biogenní aminy. V práci je popsán vznik biogenních aminů, jejich výskyt v potravinách, faktory ovlivňující jejich vznik a toxické účinky na lidský organizmus. Dále popisuje jejich produkci některými mikroorganizmy, možnosti odbourávání a některé mikroorganizmy, které je odbourávají. |
