Tato bakalářská práce se zabývá ciderem, jeho výrobou, chemickým složením a antioxidační aktivitou. Zaměřuje se na charakteristiku přírodních antioxidantů (vitamín C a E, karotenoidy, fenolické kyseliny, flavonoidy, a další). V této práci jsou popsány metody stanovení antioxidační aktivity cideru (DPPH, FRAP) a obsah jednotlivých antioxidantů v tomto nápoji. |
