Diplomová práce se zabývá tvorbou biogenních aminů bakteriemi izolovanými z bažantů. Pro výzkum byly použití bažanti z volné přírody a z chovu ve voliéře. Izolace bakterií byla provedena z prsního a stehenního svalstva, jater a kůže. Produkce biogenních aminů byla zjišťována pomocí kultivační metody a iontově-výměnné chromatografie. Teoretická část se zabývá charakteristikou mikroflóry bažantů a drůbeže, vlastnostmi a výskytem biogenních aminů a charakteristikou mikroorganismů s dekarboxylázovou aktivitou. |

This thesis deals with production of biogenic amines by bacteria isolated from pheasants. To research the use of wild pheasants and breeding in the aviary. Isolation of bacteria was performed from the breast, thigh muscle, the liver and skin. Production of biogenic amines was investigated using cultivation methods and ion-exchange chromatography. Theoretic part deals with the characterization of microflora of poultry and pheasants, properties and occurrence of biogenic amines and characterization of microorganisms with decarboxylase activity. |
