Diplomová práce se zabývá popisem rýže z hlediska botanického a chemického, pozornost byla věnována zejména aminokyselinám. Prakticky byl stanoven obsah vlhkosti vážkovou metodou, obsah popelovin spálením v muflové peci a celkový obsah dusíkatých látek pomocí Kjeldahlovy metody. Obsah aminokyselin byl po hydrolýze bílkovin stanoven iontově-výměnnou kapalinovou chromatografií. |

This thesis deals with the description of rice in term of botanical and chemical, attention was paid to the amino acids. Moisture content was determined by the gravimetric method, ash content by burning in a muffle furnace and total nitrogen content using Kjeldahl method. Amino acid content was determined after hydrolysis of proteins by ion-exchange chromatography. |
