Práce se zabývá problematikou alergie na obiloviny. Jsou shrnuty základní poznatky obilo-vin, jejich mlynářského a pekárenského zpracování a výroba těstovin. V práci je věnována pozornost základní nemoci celiakie, její projevy a diagnostika. Je popsáno léčení celiakie, které se zabývá povolenými a nepovolenými výrobky do stravy a to je jedině bezlepkovou dietou. |

This work is concerned with problematic of allergy to cereals. Basic findings are resumed of cereals of their mill and bakery processing and pasta production. Attention is paid to co-eliac disease in this work. It's symptoms and diagnostic. It is described healing of coeliac disease which is concerned with allowed and disallowed diet products. It is only non-aleurone diet. |
