dc.description.abstract	Cílem této bakalářské práce bylo pozorovat vliv vybraných vnějších faktorů na produkci biogenních aminů u mikroorganismů rodu Enterococcus. Produkce byla sledována u Enterococcus sp. izolovaného z masa králíků. Celkem bylo analyzováno 1320 vzorků. Při inokulaci byl použit Brain Heart Infusion Broth bujón. Během kultivace byly odebírány v různých časových intervalech vzorky, u kterých byla následně měřena optická denzita. Množství vyprodukovaných biogenních aminů bylo stanovováno pomocí RP-HPLC. Nejvíce produkovaným biogenním aminem testovanými bakteriemi byl tyramin (< 1470 mg/l). Produkce biogenních aminů byla nejvýznamněji snižována v médiu při pH5 a koncentraci NaCl 6%.	cs

dc.description.abstract-translated	The aim of this work was to observe the influence of selected environmental factors on the production of biogenic amines by microorganisms of the genus Enterococcus. Production was observed in Enterococcus sp. isolated from rabbit meat. 1320 samples were analyzed in total. Brain Heart Infusion Broth was used for inoculation. The samples were taken at various time intervals during cultivation and then their optical density was measured. The amount of biogenic amines produced was determined by RP ? HPLC. Tyramin was the most produced biogenic amine (< 1470 mg/l). Biogenic amines production was decreased significantly in medium with pH5 and with NaCl concentration of 6%.	en
