Tato bakalářská práce se zabývá přehledem metod termické analýzy a jejich využití při kontrole kvality potravin. Byly změřeny vzorky různých druhů potravin na DTA/TG ana-lyzátoru z důvodu zjištění tepelné stability, čistoty a jejich složení. Měřené vzorky potravin byly vybrány tak, aby zastupovaly oblast lipidů, bílkovin a tuků. |

This work deals with overview of methods of thermal analysis and their use in quality con-trol of foods. The samples of different kinds of food were measured by DTA/TG analyzer to investigate their thermal stability, purity and structure.Measured food samples were cho-sen to represent the main components in foods- lipids, proteins and fats. |
