dc.description.abstract	Teoretická část diplomové práce charakterizuje vlákninu a inulin jako zdroj rozpustné vlákniny. Pozornost je věnována především jejich zdravotnímu účinku. V práci jsou dále popsány metody stanovení inulinu a charakterizována výroba ovocných kojeneckých výživ. Praktická část je zaměřena na stanovení inulinu ve vzorcích ovocných kojeneckých výživ s přídavkem inulinu. Byla sledována časová závislost degradace inulinu ve skladovaných výrobcích a vliv jablečné odrůdy a dalších faktorů na degradaci inulinu při výrobě ovocných kojeneckých výživ.	cs

dc.description.abstract-translated	The theoretical part of the diploma thesis characterizes dietary fiber and inulin as a source of soluble fiber. Particular attention is paid to their health effects. This thesis also describes methods for the determination of inulin and characterizes the production of fruit baby food. The practical part is focused on the determination of inulin in samples of fruit baby food with added inulin. It was monitored time dependence on the degradation of inulin in stored products and the influence of apple varieties and other factors on the degradation of inulin during the production of fruit baby food.	en
